Ingredients

Flatbread and Sauce

  • 2 8-inch flatbreads (naan recommended)
  • ¼ cup prepared pesto, plus more for drizzle

Cheese

  • 1 cup shredded mozzarella
  • ⅓ cup feta cheese, crumbled

Protein and Vegetables

  • 1 cup shredded rotisserie chicken
  • 4 ounces cherry tomatoes, halved or quartered
  • ½ cup chopped fresh spinach
  • ½ small red onion, sliced
  • ¼ cup kalamata olives, sliced

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it reaches the perfect temperature for baking the flatbreads evenly and crisping the edges.
  2. Prepare Flatbreads: Place each flatbread on a baking sheet. Spread about 2 tablespoons of pesto evenly over each flatbread’s surface as a flavorful base. Then sprinkle one half cup of shredded mozzarella evenly on top of each flatbread.
  3. Add Toppings: Distribute the shredded chicken evenly across both flatbreads. Follow by layering the cherry tomatoes, chopped spinach, sliced red onion, and sliced kalamata olives. Finish by sprinkling crumbled feta cheese over the top and drizzle a little extra pesto for added flavor.
  4. Bake: Place the flatbreads on the middle rack of the oven and bake for 10-12 minutes. Bake until the cheese is melted, bubbly, and the crust edges turn crispy and golden brown.
  5. Serve: Remove the flatbreads from the oven, cut each into 3-4 slices, and serve immediately to enjoy the fresh, vibrant Mediterranean flavors at their best.

Notes

  • Using naan flatbreads provides a soft yet crispy base, but you can substitute with other flatbreads if desired.
  • Rotisserie chicken is convenient and flavorful; alternatively, you can cook your own shredded chicken.
  • Adjust the quantity of pesto according to taste preference for more or less herbal flavor.
  • Feel free to add other Mediterranean ingredients such as artichoke hearts or sun-dried tomatoes to customize the flatbread.
  • For a vegetarian option, omit the chicken and add extra vegetables or beans.
