Ingredients

Meat

Egg Mixture

  • 8 eggs
  • 1 cup cottage cheese

  • 3 cups frozen shredded hash browns
  • 3 oz crumbled feta OR shredded cheddar cheese (approximately ½ ounce per serving)

Instructions

  1. Preheat and prepare containers: Preheat your oven to 350°F (175°C) and grease six small, oven-friendly containers, such as small rectangular glass tupperware dishes, to prevent sticking during baking.
  2. Cook the sausage: In a skillet over medium heat, brown and crumble the ground breakfast sausage until fully cooked and no longer pink. Drain any excess oil from the pan to keep the bowls from getting greasy.
  3. Blend egg mixture: In a blender or mixing bowl, combine the eggs, cottage cheese, salt, and black pepper. Blend or whisk thoroughly until smooth and well incorporated to create a creamy egg base.
  4. Assemble the bowls: Evenly divide the frozen shredded hash browns among the greased containers, then add the browned sausage on top. Pour the blended egg mixture evenly over each bowl, filling them up. Finally, sprinkle about ½ ounce of your favorite cheese, either crumbled feta or shredded cheddar, on top of each bowl.
  5. Bake: Place the containers on a baking sheet and bake in the preheated oven for 25 minutes, or until the egg is set and the top is slightly golden. Let the bowls cool slightly before serving or storing.
  6. Store and reheat: Enjoy immediately or wait until the bowls cool completely before covering with lids. Store in the refrigerator for up to 5 days. To reheat, bake in the oven at 275°F for 20 minutes or microwave for about 2 minutes until warmed through.
