Ingredients
Chicken:
650 g Boneless & skinless chicken breast, cut into bite-sized pieces
Other Ingredients:
1 tbsp Olive oil
3 Garlic cloves, peeled and crushed
170 g Sun dried tomatoes, drained and very finely chopped
1 tsp Oregano
2 tsp Paprika
250 g Dried pasta
650 ml Chicken stock
150 ml Double cream
50 g Parmesan, grated
120 g Spinach
Freshly ground black pepper
Instructions
Cook the Chicken: In a large, deep frying pan, heat the oil, add chicken and cook until colored.
Add Ingredients: Add garlic, sun dried tomatoes, oregano, and paprika. Stir until garlic is softened.
Cook Pasta: Add pasta and stock, cook until pasta is done.
Finish Dish: Add spinach and cream, cook until wilted. Stir in parmesan.
Notes
Use olive oil or oil from the sun-dried tomatoes for extra flavor.
