This Marry Me Chicken Pasta is a rich and comforting one-pot recipe featuring tender chicken pieces cooked with sun-dried tomatoes, garlic, and aromatic spices, combined with creamy double cream, fresh spinach, and Parmesan cheese for a luscious pasta dish perfect for a quick yet satisfying meal in just 30 minutes.

Ingredients

Chicken and Seasonings

  • 650 g Boneless & skinless chicken breast (about 4 breasts, cut into bite-sized pieces)
  • 1 tbsp Olive oil
  • 3 Garlic cloves (peeled and crushed)
  • 170 g Sun dried tomatoes (drained and very finely chopped)
  • 1 tsp Oregano
  • 2 tsp Paprika
  • Freshly ground black pepper (to taste)

Pasta and Sauce

  • 250 g Dried pasta
  • 650 ml Chicken stock
  • 150 ml Double cream
  • 50 g Parmesan (grated)
  • 120 g Spinach

Instructions

  1. Cook the chicken: In a large, deep frying pan, heat the olive oil over medium heat until hot. Carefully add the bite-sized chicken pieces along with a good sprinkling of freshly ground black pepper. Cook for about 5 minutes, stirring occasionally, until all sides start to colour and the chicken begins to brown.
  2. Sauté aromatics: Reduce the heat to low-medium and add the crushed garlic, finely chopped sun-dried tomatoes, oregano, and paprika to the pan. Stir continuously for 3 to 5 minutes until the garlic softens and the flavors meld together.
  3. Cook the pasta: Add the dried pasta and chicken stock to the pan, stirring everything thoroughly to combine. Cover with a lid and cook for 15 to 20 minutes over medium-low heat, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed by the pasta and chicken.
  4. Add spinach and cream: Lower the heat to the lowest setting, then add the fresh spinach and double cream. Stir vigorously for 1 to 3 minutes until the spinach has wilted and the cream is heated through. Check that the chicken is fully cooked, and season with additional salt and pepper if desired.
  5. Finish with Parmesan: Turn off the heat and immediately stir in the grated Parmesan cheese until melted and incorporated, creating a rich and creamy sauce. Serve warm and enjoy your delicious one-pot Marry Me Chicken Pasta.
