Ingredients

Dry Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar

Wet Ingredients

  • 2 eggs (separated)
  • 2 cups buttermilk
  • 2 tablespoons unsalted butter (melted)
  • 1/2 teaspoon vanilla extract
  • Green food coloring (liquid or gel; gel will give a more vibrant color)

Toppings

  • Lucky Charms marshmallows (optional)
  • Maple syrup or powdered sugar for serving (optional)

Instructions

  1. Whisk dry ingredients. In a large bowl, combine the flour, baking powder, baking soda, salt, and sugar. Whisk these together until evenly mixed, ensuring the leavening agents are well distributed.
  2. Mix wet ingredients. In a medium bowl, whisk the egg yolks, buttermilk, melted butter, vanilla extract, and several drops of green food coloring until the mixture is smooth and uniformly colored.
  3. Combine wet and dry mixtures. Pour the wet ingredient mixture into the bowl with the dry ingredients. Gently mix with a whisk or fork until just partially combined; small lumps and some flour streaks are perfectly fine to maintain a light batter.
  4. Beat egg whites. In a separate medium bowl, beat the egg whites until soft peaks form. This will help incorporate air and give your pancakes a fluffy texture.
  5. Fold egg whites into batter. Using a rubber spatula, carefully fold the beaten egg whites into the pancake batter until mostly combined. Avoid overmixing to retain airiness.
  6. Rest the batter and prep the cooking surface. Let the batter rest at room temperature for 10 minutes. Meanwhile, preheat a griddle or non-stick pan to 300°F and lightly butter the surface to prevent sticking.
  7. Cook the pancakes. Using a 1/3 cup measuring cup, pour batter onto the heated griddle. Cook each side for 2-3 minutes or until golden brown and cooked through. Flip carefully once bubbles appear on the surface and edges look set.
  8. Serve. Serve the pancakes warm, topped with Lucky Charms marshmallows if desired, along with maple syrup or a dusting of powdered sugar for extra sweetness and festive presentation.

Notes

  • Using gel food coloring provides a more vibrant green color compared to liquid food coloring.
  • Resting the batter allows the flour to fully hydrate and results in tender pancakes.
  • Be careful not to overmix once the wet and dry ingredients are combined to keep pancakes fluffy.
  • Optional toppings like syrup or powdered sugar complement the marshmallows nicely.
  • You can adjust the amount of food coloring to achieve your preferred shade of green or omit it altogether for natural buttermilk pancakes.
