These Lemon Poppy Seed Energy Bites are a quick, no-bake snack that captures the bright, zesty flavor of classic lemon poppy seed muffins. They combine nutrient-rich plant-based protein powder, oats, and fresh lemon juice and zest to create a refreshing, energy-boosting treat perfect for on-the-go snacking. Easy to prepare and naturally vegan and gluten-free, they store well in the refrigerator for up to 6 days.

Ingredients

Dry Ingredients

  • 3 scoops (90g) PlantFusion vanilla bean protein powder
  • ½ cup (50g) old-fashioned rolled oats (gluten-free if necessary)
  • 1 tbsp (9g) poppy seeds
  • ½ tbsp (7g) Truvia (granular zero-calorie sweetener)
  • 1 tsp freshly grated lemon zest (about one medium lemon)

Wet Ingredients

  • 6 tbsp (90mL) freshly squeezed lemon juice (about two medium lemons)
  • 6 tbsp (90mL) water

Instructions

  1. Combine Dry Ingredients: In a large bowl, mix together the PlantFusion vanilla bean protein powder, old-fashioned rolled oats, poppy seeds, Truvia, and freshly grated lemon zest until evenly distributed.
  2. Add Wet Ingredients: Pour the freshly squeezed lemon juice and water into the dry mixture. Stir well until all ingredients are fully incorporated and a dough-like consistency forms.
  3. Shape the Bites: Using your hands, shape the mixture into 28 small spheres, roughly bite-sized.
  4. Store and Chill: Place the shaped energy bites into a Tupperware or airtight container, seal it tightly, and refrigerate. Let them chill until firm and ready to eat. They can be kept for up to 6 days in the refrigerator.

Notes

  • Protein Powder Note: This recipe was specifically designed for PlantFusion vanilla bean protein powder. Other plant-based protein powders may require adjusting the amount of protein powder or water to achieve the proper dough consistency. Whey-based protein powders are not recommended as they result in a mixture too sticky to roll and that won’t set properly.
  • Oat Alternatives: Instant oats (also known as quick-cooking or one-minute oats) can be used instead of old-fashioned rolled oats. Do not substitute steel-cut oats.
  • Poppy Seed Option: Poppy seeds can be omitted if preferred without affecting the recipe’s success.
  • Sweetener Alternatives: Any granulated sweetener can replace Truvia. If using liquid sweeteners (e.g., honey), add it with lemon juice and water but reduce water quantity accordingly.
  • Lemon Tip: Use bright yellow lemons for best flavor; Meyer lemons are highly recommended for a sweeter citrus note. Adding zest from an extra lemon will enhance the lemon flavor.
