Lemon Crumb Bars are a refreshing dessert with a buttery oat crust, creamy lemon filling, and crumbly topping. Perfectly balanced between tart and sweet, they’re ideal for warm-weather gatherings or a simple treat.

Ingredients

1 cup all-purpose flour

1 cup old-fashioned rolled oats

2/3 cup light brown sugar

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup (1 stick) unsalted butter, melted

1 can (14 oz) sweetened condensed milk

1/2 cup fresh lemon juice

1 tablespoon lemon zest

2 large egg yolks

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Add melted butter and stir until crumbly.
  3. Press half of the crumb mixture into the bottom of the prepared pan to form a crust.
  4. Bake the crust for 15 minutes, until lightly golden. Let it cool slightly.
  5. In another bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolks until smooth.
  6. Pour the lemon filling over the crust and spread it evenly. Sprinkle the remaining crumb mixture on top.
  7. Bake for 20-25 minutes, or until the topping is golden brown.
  8. Cool to room temperature, then refrigerate for at least 2 hours before slicing.
