Instructions

  1. Prepare the baking sheet: Line a large baking sheet with parchment paper to prevent the bites from sticking during freezing.
  2. Crush freeze-dried blueberries: Place ⅓ cup freeze-dried blueberries in a zip-top plastic bag and crush them into a very fine powder using a rolling pin.
  3. Mix the yogurt base: Transfer the blueberry powder to a medium bowl. Stir in 1 cup Greek yogurt, 2 tablespoons vanilla extract, 2 teaspoons grated lemon zest, ¼ teaspoon ground cardamom (or cinnamon), and ⅛ teaspoon salt until the mixture is smooth and well combined.
  4. Coat fresh blueberries: Add 2 cups fresh blueberries to the yogurt mixture and gently stir to coat each berry evenly.
  5. Form the bites: Using a fork, remove one blueberry at a time from the yogurt and tap off the excess. Use a wooden pick to gently push the coated blueberry onto the prepared baking sheet, spacing them apart to avoid sticking.
  6. Freeze: Place the baking sheet uncovered in the freezer and freeze for at least 2 hours, or up to 24 hours, until the bites are firm.
  7. Serve: Remove the bites from the freezer 5 minutes before serving to soften slightly for optimal texture.
