This Leftover Brisket Fried Rice recipe transforms your smoked brisket into a flavorful, quick, and satisfying meal.   • 2 1/2 Tbsp (40g) Olive Oil or vegetable oil, divided
  • 8 oz Leftover Smoked Brisket, cut into bite-size pieces
  • 1/2 White Onion, diced
  • 1 large Jalapeño Pepper, diced, plus extra for garnish
  • 4 oz Shiitake Mushrooms, roughly chopped
  • 2 C (260g) Cooked and Chilled Rice
  • 2 large Eggs, beaten
  • 1/4 C Sliced Green Onion, plus extra for garnish
  • 1/4 C (60g) Trader Joe’s Green Dragon Sauce or your choice of hot sauce
  • Optional: Soy sauce to taste
  • Optional garnish: Additional hot sauce or BBQ sauce

Instructions

  1. Heat oil and sauté vegetables and brisket: Warm a large cast iron skillet or wok over high heat and add 2 Tbsp (32g) of oil. Once hot, add the diced white onion, jalapeño, shiitake mushrooms, and leftover smoked brisket. Stir every minute for 3-4 minutes until the vegetables start to soften and the brisket is heated through.
  2. Add rice: Incorporate the cooked and chilled rice into the skillet. Stir frequently for another 3-4 minutes until the rice is heated and begins to jump slightly around the pan.
  3. Cook eggs: Push the rice and meat mixture to one side of the pan. Add the remaining 1/2 Tbsp (8g) of oil to the empty side and pour in the beaten eggs. Let the eggs cook until the bottom browns slightly, then fold the eggs over the rice mixture and chop everything into small pieces using a spatula or spoon.
  4. Add green onions: Stir in the sliced green onions and cook for 30-60 seconds until fragrant and slightly softened.
  5. Season with sauce: Pour in the Green Dragon sauce or preferred hot sauce, stirring well to combine for 30-60 seconds. Add soy sauce at this stage if using, then remove the skillet from heat.
  6. Garnish and serve: Optionally garnish with additional sliced jalapeño, green onions, and extra hot sauce or BBQ sauce before serving.

Notes

  • Use day-old chilled rice for the best texture; freshly cooked rice tends to be too soft and sticky.
  • You can substitute Trader Joe’s Green Dragon Sauce with any hot sauce or a mix of sriracha and soy sauce as preferred.
  • If you don’t have shiitake mushrooms, cremini or button mushrooms can be used instead.
  • Adjust the amount of jalapeño and hot sauce to suit your heat tolerance.
  • The cast iron skillet or wok is highly recommended for even heat distribution and achieving the desired slightly crispy texture on the rice.
  • Adding soy sauce is optional depending on your salt preference.
