Lazy Day Lemon Cream Pie Bars combine tangy lemon flavor with a creamy layer atop a buttery graham cracker crust for an easy and refreshing dessert.

Ingredients

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

8 oz cream cheese, softened

1/2 cup powdered sugar

1 cup whipped topping (such as Cool Whip)

2 cups lemon pie filling (store-bought or homemade)

Whipped cream (optional, for topping)

Lemon slices (optional, for garnish)

Powdered sugar (optional, for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until evenly coated.
  2. Press mixture firmly into the bottom of a greased 9×9-inch baking dish to form the crust. Bake 8–10 minutes, then cool completely.
  3. In a separate bowl, beat softened cream cheese and powdered sugar until smooth. Fold in whipped topping gently.
  4. Spread the cream cheese mixture evenly over the cooled crust.
  5. Spread lemon pie filling over the cream cheese layer evenly.
  6. Bake bars for 25–30 minutes until edges are set but center jiggles slightly. Cool to room temperature, then refrigerate at least 2 hours.
  7. Before serving, top with whipped cream, garnish with lemon slices, and dust with powdered sugar if desired.

Notes

  • Use gluten-free graham cracker crumbs for a gluten-free version.
  • Substitute cream cheese and whipped topping with plant-based alternatives for a vegan version.
  • Add lemon zest to the cream cheese layer for extra citrus flavor.
  • Store bars in an airtight container in the fridge for up to 4 days.
  • Freeze wrapped bars for up to 1 month; thaw overnight in the refrigerator.
  • Baking the crust sets it and provides a firm base.
  • The bars are done when edges are set and center jiggles slightly.
  • Can be made in a 9×13-inch pan by doubling ingredients and adjusting bake time.
