These fluffy Keto Bread Rolls are the perfect low-carb alternative for dinner rolls, sliders, or hamburger buns. Ingredients

Cheeses

  • 2 cups shredded cheese (mozzarella or cheddar, low-moisture preferred)
  • 1/4 cup cream cheese, softened

Dry Ingredients

  • 1 1/2 cups almond flour
  • 1 teaspoon baking powder (optional)

Eggs

  • 3 large eggs, divided (2 for dough, 1 for egg wash)

Instructions

  1. Prep Oven and Baking Tray: Preheat your oven to 180°C/350°F. Line a large baking tray with parchment paper and set it aside to prevent sticking.
  2. Melt Cheeses: In a large, microwave-safe bowl, add the shredded cheese and softened cream cheese. Microwave for 30 seconds, or until the cheeses are mostly melted. Remove and whisk together until smooth, then let the mixture cool for several minutes.
  3. Make Dough: Once the cheese mixture is slightly cooled, add the almond flour and two of the eggs. If using, add the baking powder. Mix well until a smooth dough forms and all ingredients are fully incorporated.
  4. Shape Rolls: Using your hands, divide the dough into 10 equal pieces and shape each into a ball. Place them evenly spaced on the prepared baking tray.
  5. Egg Wash: Whisk the remaining egg. Using a pastry brush, brush the egg over the tops of each dough ball. This gives the rolls a beautiful golden color as they bake.
  6. Bake: Bake the rolls in the preheated oven for 25 minutes, or until the tops are golden brown. Serve warm for best texture and flavor.

Notes

  • Use low-moisture mozzarella cheese for a neutral flavor and better texture.
  • 2 eggs go into the dough; 1 egg is reserved for the egg wash.
  • To store, keep leftover rolls in an airtight container in the fridge for up to 1 week.
  • To freeze, place cooled rolls in a zip-top bag and freeze up to 6 months. Thaw before reheating.
