These fluffy pull-apart keto rolls are easy to make and versatile, perfect for enjoying as dinner rolls, sliders, or hamburger buns. With only 2 grams of net carbs per serving, they are a delicious low-carb option.

Ingredients

Cheese Dough:

  • 2 cups shredded mozzarella or cheddar cheese
  • 1/4 cup cream cheese, softened
  • 1 1/2 cups almond flour
  • 2 large eggs, divided
  • 1 teaspoon baking powder (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 180C/350F and line a baking tray with parchment paper.
  2. Melt cheeses: In a microwave-safe bowl, melt shredded cheese and cream cheese. Whisk until smooth and let cool slightly.
  3. Mix dough: Add almond flour and two eggs to the cheese mixture, mix until smooth.
  4. Form rolls: Shape dough into 10 balls, place on the tray. Whisk the remaining egg and brush the rolls.
  5. Bake: Bake for 25 minutes until golden. Serve warm.

Notes

  • Use low moisture mozzarella cheese for best results.
  • 2 eggs are used for the dough, 1 for the egg wash.
  • Store leftovers in the refrigerator for up to 1 week.
  • Freeze in a ziplock bag for up to 6 months. Thaw before reheating.
  • Reheat in the microwave or oven until warm.
