These fluffy and delicious keto bread rolls are easy to make and perfect for any meal. Enjoy them as a dinner roll, slider, or hamburger bun with just 2 grams of net carbs per serving.

Ingredients

Ingredients:

  • 2 cups shredded mozzarella or cheddar cheese
  • 1/4 cup cream cheese, softened
  • 1 1/2 cups almond flour
  • 3 large eggs, divided
  • 1 teaspoon baking powder (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 180C/350F and line a baking tray with parchment paper.
  2. Melt cheeses: In a microwave-safe bowl, melt shredded cheese and cream cheese, then whisk until smooth.
  3. Add ingredients: Mix in almond flour and two eggs to form a dough.
  4. Shape dough: Form 10 dough balls and place them on the tray. Brush with the remaining egg.
  5. Bake: Bake for 25 minutes until golden. Serve warm.

Notes

  • Use low moisture mozzarella cheese for best results.
  • 2 eggs are used for the dough, 1 for the egg wash.
  • Store leftovers in the fridge for up to 1 week.
  • Freeze in a ziplock bag for up to 6 months. Thaw before reheating.
  • Reheat in the microwave or oven until warm.
