A refreshing and nutritious Kale Quinoa Salad with a zesty lemon dressing. Packed with fresh vegetables, quinoa, chickpeas, and flavorful herbs, this gluten-free and vegetarian salad is perfect as a light meal or side dish.

Ingredients

Kale Salad:

  • 6 cups chopped kale
  • 1 teaspoon olive oil

Salad Ingredients:

  • 1 cup cooked quinoa, cooled
  • 1 cup canned chickpeas, drained and rinsed
  • 1/3 cup diced red onion
  • 1/3 cup diced cucumber
  • 1/3 cup pepitas
  • 1/3 cup golden raisins
  • 1/3 cup crumbled feta cheese
  • 1/8 cup fresh chopped dill
  • 1/8 cup fresh chopped parsley

Kale Salad Dressing:

Instructions

  1. Prepare the kale: Rinse kale under cold water, dry, chop, and place in a bowl. Massage with olive oil and salt for 1-2 minutes. Let sit for 10 minutes.
  2. Assemble the salad: Add remaining salad ingredients (except dressing) to the bowl.
  3. Dress and serve: Mix kale salad dressing, pour over salad, toss, and serve.

Notes

  • Properly prepare kale by rinsing, drying, massaging with oil and salt, and resting before assembling.
