This Italian Bean Soup is a comforting, hearty dish combining savory Italian sausage, tender vegetables, and nourishing beans. This soup is an ideal way to use pantry staples and create a filling, nutritious dinner.
1 pound Italian sausage or ground beef
1 onion, diced
1 ½ teaspoons Italian seasoning
½ teaspoon garlic powder
1 carrot, chopped
3 cups beef broth or chicken broth
15 ounces canned diced tomatoes (with juices)
15 ounces canned cannellini beans (or white kidney beans), drained and rinsed
2 tablespoons tomato paste
1 bay leaf
Brown the sausage and onion in a large pot until no pink remains. Drain the fat.
Add the remaining ingredients (Italian seasoning, garlic powder, carrot, broth, tomatoes, beans, tomato paste, and bay leaf) and bring to a boil.
Reduce the heat and simmer for 15 minutes or until the carrot is tender and flavors have blended.
Discard the bay leaf and serve.
Garnish with Parmesan cheese and parsley if desired.
For a lighter version, substitute ground chicken or turkey for the sausage.
To change up the beans, try using Great Northern beans or black beans.
Add extra veggies like zucchini, spinach, or roasted vegetables for a boost in nutrition.
