This Italian Bean Soup is a comforting, hearty dish combining savory Italian sausage, tender vegetables, and nourishing beans. Ingredients

1 pound Italian sausage or ground beef

1 onion, diced

1 ½ teaspoons Italian seasoning

½ teaspoon garlic powder

1 carrot, chopped

3 cups beef broth or chicken broth

15 ounces canned diced tomatoes (with juices)

15 ounces canned cannellini beans (or white kidney beans), drained and rinsed

2 tablespoons tomato paste

1 bay leaf

Instructions

  • Brown the sausage and onion in a large pot until no pink remains. Drain the fat.

  • Add the remaining ingredients (Italian seasoning, garlic powder, carrot, broth, tomatoes, beans, tomato paste, and bay leaf) and bring to a boil.

  • Reduce the heat and simmer for 15 minutes or until the carrot is tender and flavors have blended.

  • Discard the bay leaf and serve.

  • Garnish with Parmesan cheese and parsley if desired.

Notes

  • For a lighter version, substitute ground chicken or turkey for the sausage.

  • To change up the beans, try using Great Northern beans or black beans.

  • Add extra veggies like zucchini, spinach, or roasted vegetables for a boost in nutrition.
