A deliciously spicy and cheesy chicken melt sandwich featuring shredded chicken mixed with chipotle sauce, Greek yogurt, fresh vegetables, and melted cheeses, toasted to crispy perfection for a satisfying meal any time of day.

Ingredients

Chicken Mixture

  • 1 chicken breast (boiled and shredded)
  • ¼ tsp salt
  • ½ tsp ground black pepper
  • ½ tsp crushed red pepper flakes
  • ½ cup chipotle sauce
  • 1 tbsp Greek yogurt
  • 2 tbsp fresh chives (chopped)
  • ½ red onion (diced)
  • ½ carrot (peeled and grated)
  • ½ cup cheddar cheese (shredded)

Additional Ingredients

  • Mozzarella cheese (as needed)
  • Butter (as needed)
  • 8 slices sandwich bread

Instructions

  1. Prepare the Chicken Mixture: In a bowl, combine the shredded chicken, salt, black pepper, crushed red pepper flakes, chipotle sauce, Greek yogurt, chopped chives, diced red onion, grated carrot, and shredded cheddar cheese. Mix thoroughly until all ingredients are well incorporated.
  2. Toast Bread Slices: Spread butter on one side of each sandwich bread slice. Heat a pan or griddle over medium heat and place the bread slices butter-side down to lightly toast until golden and crisp.
  3. Assemble the Sandwiches: Flip the toasted bread slices and generously spread the prepared chicken mixture on the toasted side. Top the mixture with a layer of mozzarella cheese, then cover each with another slice of bread, positioning the toasted side facing the filling.
  4. Cook the Sandwiches: Spread a thin layer of butter on the outside of each sandwich. Place the sandwiches in the pan over medium-low heat and toast for 3–4 minutes on each side, covering the pan if necessary to help the mozzarella cheese melt evenly and the bread turn golden and crisp.
  5. Serve: Remove the hot and cheesy chicken melts from the pan. Slice each sandwich diagonally and serve warm with a side of chips and extra chipotle sauce if desired.
