Ingredients

Sweet Potatoes

  • 2 pounds sweet potatoes, peeled and chopped into bite-sized pieces
  • Salt, to taste

Honey-Lemon Butter

  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons butter, melted
  • 1 lemon, juice and zest
  • ¼ cup honey

Instructions

  1. Prep: Preheat your oven to 425° Fahrenheit. Line a baking sheet with aluminum foil and set aside for easy cleanup.
  2. Prepare Sweet Potatoes: Peel and cut the sweet potatoes into bite-sized pieces. Place them in a large bowl and season generously with salt.
  3. Make Honey-Lemon Butter: In a small saucepan, add the butter and olive oil. Heat over medium until the butter melts completely. Stir in the lemon juice, lemon zest, and honey, then reduce to low heat and let it simmer gently for one minute to blend the flavors.
  4. Coat Sweet Potatoes: Pour the warm honey-lemon butter mixture over the sweet potatoes. Toss thoroughly to ensure each piece is evenly coated with the glaze.
  5. Roast: Spread the coated sweet potatoes evenly on the prepared baking sheet. Roast in the preheated oven for 25 minutes, until tender and caramelized. Check for doneness and roast a little longer if necessary.

Notes

  • For more caramelization, toss sweet potatoes halfway through roasting.
  • You can substitute maple syrup for honey for a different flavor profile.
  • Use fresh lemon zest and juice for the best citrus flavor.
  • Adding a pinch of cinnamon or smoked paprika can enhance the flavor.
