  • 4 large buttery croissants (fresh or day-old; or 6 medium-sized croissants)

Honey Butter Glaze

  • 125 g salted butter
  • 65 g honey
  • 65 g light brown sugar
  • Pinch flaky salt

Instructions

  1. Preheat the Oven: Preheat your oven to 180°C (360°F/Gas Mark 4) so it’s ready when you finish preparing the croissants.
  2. Make the Honey Butter Glaze: In a small saucepan or microwave-safe bowl, melt the butter completely. Stir in the honey, light brown sugar, and a pinch of flaky salt until the mixture is smooth, glossy, and well combined.
  3. Prepare the Croissants: Slice each croissant in half to allow the glaze to soak deeply into the layers, enhancing the flavor and texture.
  4. Brush Generously: Using a pastry brush, coat both the inside and outside of each croissant with the honey butter glaze. Be generous for a rich, caramelized result. Alternatively, you can dip the croissants into the glaze after it cools slightly.
  5. Bake: Place the glazed croissants on a lined baking tray, either flat or standing up. Note that smaller croissants may fall if stood upright due to the small base surface. Bake for 12-15 minutes, or until the croissants turn golden, glossy, and the glaze is bubbling around the edges.
  6. Cool & Serve: Allow the croissants to cool on the tray for about 5 minutes as the honey butter glaze will be very hot. Serve them plain or with toppings such as ice cream, fresh berries, or a drizzle of melted chocolate for extra indulgence.
