Ingredients

Meatloaf

  • 2 pounds ground beef
  • 1 pound ground pork
  • 2 large eggs, beaten
  • ½ cup (50 g) grated parmesan cheese
  • 2 tablespoons flat-leaf parsley, chopped
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper
  • ½ cup (122.5 g) milk
  • ½ cup (54 g) fine dry breadcrumbs
  • 2 cloves garlic, minced
  • ¼ cup onion, finely chopped

Glaze

  • 1 cup (280 g) barbecue sauce
  • ⅓ cup (113 g) honey
  • ⅓ cup grape jelly

Instructions

  1. Preheat Oven: Preheat the oven to 350°F. Spray a large 6½ x 10-inch loaf pan with nonstick cooking spray and set aside.
  2. Combine Meat Ingredients: In a large bowl, mix together ground beef, ground pork, beaten eggs, grated parmesan cheese, chopped flat-leaf parsley, kosher salt, and black pepper until just combined. Avoid overmixing to keep the meatloaf tender.
  3. Prepare Milk Mixture: In a separate medium bowl, combine milk, fine dry breadcrumbs, minced garlic, and finely chopped onion.
  4. Mix Wet and Dry Ingredients: Add the milk and breadcrumb mixture to the meat mixture. Blend gently but thoroughly to incorporate all ingredients evenly without overworking the meat.
  5. Shape Meatloaf: Press the combined meat mixture tightly into the prepared loaf pan, ensuring the surface is even. Alternatively, shape the meat mixture into an 8–9 inch long, 4–5 inch wide loaf on a baking sheet ensuring uniform thickness for even cooking.
  6. Prepare Glaze: In a small bowl, combine barbecue sauce, honey, and grape jelly. Mix until smooth and well blended.
  7. Apply First Glaze Layer: Spread half of the barbecue glaze evenly over the top of the meatloaf.
  8. Bake Meatloaf: Bake the meatloaf at 350°F for 40 minutes.
  9. Apply Second Glaze Layer: Remove the meatloaf from the oven and spread the remaining glaze over the top.
  10. Finish Baking: Return the meatloaf to the oven and bake for an additional 20 minutes. The meatloaf is cooked when its internal temperature reaches 160°F.
  11. Rest Before Serving: Let the meatloaf cool for about 5 minutes before slicing and serving to allow juices to redistribute.
