Homemade Strawberry Soda is a refreshing and natural beverage made by simmering fresh strawberries with sugar and water, then blending the mixture into a syrup that’s perfect for mixing with sparkling water. This recipe produces a fruity, lightly sweet soda syrup that is thinner than jam, similar to the consistency of maple syrup, making it easy to mix and enjoy chilled with ice. Ideal for a quick summertime drink or a homemade alternative to store-bought sodas, this strawberry soda strikes a perfect balance between sweet and fresh flavors.

Ingredients

Strawberry Syrup

  • 2 cups chopped strawberries
  • 1/2 cup sugar
  • 2 tablespoons water

Instructions

  1. Combine Ingredients: In a small pot, add the chopped strawberries, sugar, and water. Heat the mixture over medium heat until it becomes bubbly.
  2. Simmer and Stir: Continuously stir the mixture until the strawberries become limp and start breaking down. Add additional water if necessary to ensure the fruit cooks evenly and does not dry out.
  3. Cool and Puree: Remove the pot from heat and allow the mixture to cool slightly. Use an immersion blender or a standard blender to puree the mixture until smooth.
  4. Adjust Consistency: Aim for a syrup that is thinner than jam with a consistency similar to maple syrup or slightly thicker, so it mixes well with sparkling water.
  5. Store: Transfer the strawberry syrup into a mason jar or airtight container and refrigerate until you are ready to use it.
  6. Prepare Strawberry Soda: When ready to serve, fill a glass with ice, add a couple tablespoons of the strawberry syrup (adjust more or less based on your sweetness preference), then top with seltzer, club soda, or sparkling water. Stir gently to combine.
  7. Enjoy: Sip and enjoy your homemade strawberry soda. Optionally, add fresh fruit or herbs for additional flavor variations.

Notes

  • You can add fresh mint or basil for a herbal twist to your soda.
  • Adjust the sugar quantity to taste, reducing for a less sweet syrup or increasing for higher sweetness.
  • Use fresh, ripe strawberries for the best flavor.
  • The syrup keeps well refrigerated for up to one week.
  • If the syrup is too thick, stir in a little more water to thin before mixing with sparkling water.
