Hobo Casserole is a comforting, hearty layered dish featuring ground beef, sliced potatoes, creamy mushroom and chicken soup mixture, and melted cheese baked to perfection. This easy-to-make casserole combines savory flavors with a cheesy, creamy texture, making it a perfect family dinner or potluck favorite.

Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • 1 cup onion, diced
  • 1 tablespoon garlic, minced
  • 5 medium potatoes, thinly sliced

Seasonings

  • 1 teaspoon salt
  • 1 teaspoon black pepper

Soup and Dairy

  • 1 can (10.7 oz) condensed cream of mushroom soup (with or without garlic)
  • 1 can (10.7 oz) condensed cream of chicken soup
  • 1 can (12 oz) evaporated milk
  • ½ cup milk
  • 2 cups shredded cheese

Instructions

  1. Preheat Oven and Prepare Pan: Heat the oven to 375°F (190°C). Spray a 9×13 inch baking pan with cooking spray to prevent sticking and ensure easy cleanup.
  2. Cook Ground Beef Mixture: In a large skillet over medium heat, cook the ground beef, diced onions, and minced garlic until the beef is no longer pink. Drain any excess fat, then season the mixture with salt and black pepper.
  3. Layer Potatoes and Beef: Arrange a layer of thinly sliced potatoes evenly over the bottom of the prepared baking pan. Spread half of the cooked beef mixture over the potatoes.
  4. Mix and Add Soup Mixture: In a bowl, whisk together the condensed cream of mushroom soup, condensed cream of chicken soup, evaporated milk, and regular milk until smooth. Pour half of this soup mixture over the beef layer and sprinkle half of the shredded cheese on top.
  5. Repeat Layers: Repeat the layering process by placing the remaining potatoes, then the remaining beef mixture, pouring the rest of the soup mixture on top, and finally sprinkling the remaining cheese as the top layer.
  6. Cover with Foil: Cover the pan with a piece of tinfoil, making sure to tent it so the foil does not touch the cheese, which prevents sticking and burning.
  7. Bake Casserole: Place the pan in the preheated oven and bake for 1 hour covered. After one hour, remove the foil carefully and continue baking uncovered for an additional 30 minutes to brown the cheese and cook the potatoes thoroughly.
  8. Rest and Serve: Remove the casserole from the oven and let it stand, uncovered, for 10 minutes to set before slicing. Use a wire rack if desired to cool slightly before serving.

  • Use a sharp knife or mandoline to get uniform potato slices.
