This refreshing hibiscus tea strawberry-lemonade refresher is a perfect summer beverage that’s both delicious and healthy. Combining tart hibiscus tea with sweet strawberries and zesty lemon juice, it’s an easy-to-make drink that brightens up any occasion with natural flavors and a vibrant color.

Ingredients

Tea Base

  • 2 cups water
  • 2 hibiscus tea bags OR 2 tablespoons dried hibiscus flowers

Fruit and Sweetener

  • ½ cup strawberries, washed and sliced
  • ¼ cup freshly squeezed lemon juice
  • 23 tablespoons maple syrup, adjust to taste

Optional Toppings

  • Extra sliced strawberries
  • Lemon slices
  • Fresh mint leaves

Instructions

  1. Prepare Hibiscus Tea: Boil 2 cups of water in a kettle. Once boiling, remove from heat and steep 2 hibiscus tea bags or 2 tablespoons dried hibiscus flowers in the hot water for 5-7 minutes, depending on desired strength. Remove tea bags or strain out the flowers and allow the tea to cool.
  2. Make Strawberry Puree: In a blender, combine the sliced strawberries with ¼ cup of the cooled hibiscus tea. Blend until smooth. For a smoother texture, optionally strain the puree through a fine mesh sieve or nut milk bag.
  3. Combine Ingredients: In a large pitcher, mix the remaining cooled hibiscus tea, strawberry puree, freshly squeezed lemon juice, and maple syrup. Stir well to combine.
  4. Adjust Flavor: Taste the mixture and add more maple syrup for sweetness or more lemon juice for tartness, according to preference.
  5. Serve: Pour the refresher over ice in glasses. Garnish with optional toppings such as lemon slices, extra strawberries, and fresh mint leaves. Enjoy cold.

Notes

  • You can brew hibiscus tea up to 2-3 days ahead and store it in the refrigerator to save time when preparing the refresher.
  • If using maple syrup substitutes, consider agave nectar (use slightly less), date syrup, or honey (if not vegan). When using honey, stir it into warm tea to ensure it dissolves fully.
