This Healthy Turkey Spinach Lasagna is a comforting and nourishing main course featuring layers of flavorful ground turkey cooked with spinach in a rich tomato sauce, combined with a creamy ricotta, mozzarella, and parmesan cheese mixture, all assembled with oven-ready lasagna noodles. It’s high in protein, lower in fat, and perfect for a wholesome family meal.

Ingredients

Meat Sauce

  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp tomato paste
  • 1 jar (710 mL) pasta sauce of your choice
  • 4 cups baby spinach, roughly chopped

Lasagna and Cheese Mixture

  • 1 box (375 g) oven-ready lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated parmesan cheese, divided
  • 2 tsp dried parsley
  • 1/4 tsp salt
  • 1 large egg, beaten

Instructions

  1. Brown the turkey and aromatics: Warm olive oil over medium-high heat in a pan. Add the ground turkey, finely chopped onion, and minced garlic. Cook, stirring frequently, until the turkey is fully browned and no pink remains, and the onions are translucent.
  2. Simmer the sauce: Stir in the tomato paste, Italian seasoning, and black pepper into the browned turkey mixture. Add the jar of pasta sauce along with the chopped baby spinach. Stir everything together and allow it to simmer gently for about 5 minutes. Taste and season with salt as needed, then remove from heat.
  3. Prepare the cheese mixture: In a medium mixing bowl, combine the ricotta cheese with 1 ½ cups of the shredded mozzarella, ¼ cup of parmesan cheese, dried parsley, the beaten egg, and salt. Mix until smooth and well combined.
  4. Assemble the lasagna: Spread 1 cup of the meat sauce mixture evenly in the bottom of a 9×13-inch baking dish. Layer 3 oven-ready lasagna noodles on top. Spread 1 cup of the cheese mixture over the noodles, followed by 1 cup of meat sauce. Repeat this layering process two more times (noodles, cheese mixture, meat sauce). Finish with a final layer of 3 lasagna noodles topped with the remaining meat sauce. Cover the dish tightly with aluminum foil.
  5. Bake covered: Place the covered dish in a preheated oven at 350°F (175°C) and bake for 45 minutes.
  6. Bake uncovered with cheese topping: Remove the foil and sprinkle the remaining ½ cup shredded mozzarella and ¼ cup parmesan cheese evenly over the top. Return the lasagna to the oven, uncovered, and bake for an additional 15 minutes or until the cheese is melted, bubbly, and lightly browned. If desired, broil for 1-2 minutes to achieve a golden crust, watching closely to prevent burning.
  7. Rest and serve: Remove the lasagna from the oven and let it rest for 10-15 minutes before slicing and serving to allow the layers to set.

Notes

  • Storing leftovers: Let the lasagna cool completely before transferring to an airtight container. Store in the refrigerator for up to 5 days.
  • Freezing: For optimal taste and texture preservation, freeze individual slices in freezer-safe containers or bags. Consume within 2-3 months for best quality.
