Ingredients

Chicken and Seasonings

  • 2 lbs boneless, skinless chicken breasts

  • 1 teaspoon onion powder

Other Ingredients

  • 1 cup salsa (red or green; red preferred)
  • Juice of 2 limes (optional)
  • 1/2 cup chicken broth (low or no salt, or water)

Instructions

  1. Prepare the Chicken: Place the chicken breasts into the crockpot insert in a single layer. Sprinkle all the seasonings evenly over the chicken, ensuring full coverage.
  2. Add Salsa and Lime Juice: Pour the salsa over the seasoned chicken breasts. If using, squeeze the juice of two limes on top for added brightness and tang.
  3. Add Broth and Cook: Pour the chicken broth or water into the crockpot. Cover with the lid and cook on low for 4 to 6 hours (recommended for best tenderness). High heat can be used for 3 to 4 hours but is not preferred as low and slow cooking yields juicier chicken.
  4. Shred the Chicken: When the chicken is fully cooked and tender, remove it from the crockpot and shred it using two forks on a cutting board. Alternatively, use a stand mixer or hand mixer off the crockpot to shred the meat. Avoid shredding directly in the crockpot to protect the enamel coating.
  5. Return and Soak: Return the shredded chicken to the crockpot juices to soak up all the flavorful liquids and keep moist.
  6. Serve: Serve the shredded chicken with your favorite taco toppings such as tortillas, diced onions, cilantro, avocado, cheese, sour cream, or salsa for delicious chicken tacos.
