This healthy chickpea and vegetable pasta salad is a light and flavorful dish packed with protein. It features protein pasta, chickpeas, cucumber, cherry tomatoes, red onion, and fresh herbs, all tossed in a delicious vinaigrette.

Ingredients

For the Salad:

  • 4 oz protein plus pasta
  • 4 cups vegetable broth
  • 1 cup canned chickpeas, drained and rinsed
  • 2 cups chopped cucumbers
  • 2 cups cherry tomatoes, halved
  • 1/2 cup chopped red onion
  • 2 tbsp chopped fresh basil
  • 1 tbsp chopped fresh mint

For the Vinaigrette:

  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1/2 lemon, juiced
  • 2 tsp honey
  • 1 tsp dried oregano
  • 1.5 tsp kosher salt
  • 4 cloves garlic, minced
  • Fresh cracked pepper, to taste

Instructions

  1. Cook the Pasta: Boil the vegetable broth in a small saucepan, add the pasta, and cook until tender. Drain and set aside.
  2. Prepare the Vegetables: Chop the cucumbers, tomatoes, red onion, and herbs. Drain and rinse the chickpeas.
  3. Make the Vinaigrette: Combine olive oil, red wine vinegar, lemon juice, honey, oregano, salt, garlic, and pepper in a bowl.
  4. Assemble the Salad: In a large mixing bowl, combine the cooked pasta, chickpeas, tomatoes, cucumbers, red onion, and herbs. Add the vinaigrette and toss to combine. Adjust seasoning as needed.
