2 medium cooked chicken breasts, shredded or chopped (rotisserie chicken works great)
2 ripe avocados, pitted and diced
1 pound cooked rotini pasta or similar, chilled
1/2 cup chopped red onion
1 cup cherry tomatoes, halved
1/2 cup freshly chopped basil
Salt and fresh cracked pepper, to taste
For the dressing:
1/2 cup white wine vinegar
1 tablespoon Italian seasoning
3/4 cup extra virgin olive oil
Salt and pepper to taste
Add the shredded chicken, pasta, onion, avocado, cherry tomatoes, and basil to a large bowl.
In a jar, combine the ingredients for the dressing: white wine vinegar, Italian seasoning, olive oil, salt, and pepper.
Drizzle the dressing over the salad and toss gently to combine.
Serve immediately or chill for later.
To keep the avocado and tomato fresh, add them just before serving.
For a creamier dressing, you can substitute Greek yogurt.
