Ingredients

Dry Ingredients

  • 2 cups old fashioned rolled oats
  • 1 teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg
  • ¼ cup chopped pecans

Wet Ingredients

  • 1 ½ cups almond milk
  • 1 cup diced apples
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 beaten egg

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and grease an 8×8 inch oven-safe baking dish to prevent sticking.
  2. Mix Ingredients: In a large mixing bowl, combine all the rolled oats, diced apples, chopped pecans, cinnamon, ginger, nutmeg, almond milk, maple syrup, olive oil, and beaten egg. Stir well until all ingredients are thoroughly mixed.
  3. Pour Batter: Pour the combined mixture into the prepared baking dish. The batter may appear quite liquidy at first, but it will absorb as it bakes, so do not be concerned.
  4. Bake: Bake the oatmeal uncovered in the preheated oven for 35 to 40 minutes, or until the top turns golden brown and all the almond milk has been absorbed.
