Ingredients

Spaghetti

  • ½ lb Spaghetti

Sauce

  • ¼ cup Olive oil
  • 2 tbsp Haitian Epis
  • 1 Onion, chopped
  • 1 Green Bell Pepper, diced
  • 1 Red Bell Pepper, diced
  • 2 Roma Tomatoes, diced
  • 2 tbsp Tomato paste
  • 3 small Maggi cubes
  • 4 Hot Dogs, cut into rounds
  • ⅛ tsp ground Cloves
  • ⅓ cup reserved pasta water
  • Salt, to taste

Garnish

  • 2 Hard boiled eggs

Instructions

  1. Cook the Pasta: Boil the spaghetti in salted water according to package instructions until al dente. Reserve about ⅓ cup of pasta water before draining the pasta.
  2. Prepare the Sauce Base: Heat ¼ cup olive oil in a large saucepan. Add 2 tablespoons of Haitian Epis and fry until the mixture is fragrant and turns a golden color, which builds the flavorful foundation for the sauce.
  3. Sauté Vegetables: Add the chopped onion, diced green and red bell peppers, and diced Roma tomatoes to the saucepan. Sauté for about 5 minutes until the vegetables soften and release their flavors.
  4. Add Tomato Paste and Seasoning: Stir in 2 tablespoons of tomato paste and crumble in 3 small Maggi cubes for extra savory depth. Add the sliced hot dogs and sprinkle ⅛ teaspoon ground cloves, mixing well to combine all ingredients.
  5. Simmer the Sauce: Pour in the reserved pasta water and let the mixture simmer gently for 10 to 15 minutes until the sauce thickens and flavors meld. Adjust salt to taste.
  6. Combine Pasta and Sauce: Add the cooked spaghetti to the sauce and toss thoroughly to coat every strand with the rich, aromatic sauce.
  7. Serve: Plate the Haitian Spaghetti and garnish each serving with half of a hard boiled egg. Enjoy this delicious, hearty Caribbean feast!

Notes

  • Haitian Epis is a traditional seasoning paste made from herbs, garlic, peppers, and spices; it can be found in Caribbean or international grocery stores or homemade from scratch.
  • Maggi cubes add a savory umami flavor—substitute with chicken or vegetable bouillon cubes if unavailable.
  • Adjust the number of hot dogs or omit them to suit dietary preferences or to create a vegetarian version.
  • Reserve pasta water is important for the sauce’s consistency and helps the sauce cling to the pasta.
  • Serve immediately for best texture and flavor; leftovers can be reheated gently on the stovetop with a splash of water.
