Ground Chicken Tacos

Baked ground chicken tacos with crispy cheesy shells, seasoned chicken filling, and fresh garnishes—perfect for an easy, flavorful weeknight meal or Taco Tuesday.

Ingredients

1 pound ground chicken

2 tablespoons taco seasoning (store-bought or homemade)

Juice of 1 lime

2¼ cups shredded Mexican-blend cheese

12 corn tortillas

Olive oil, for brushing each tortilla (approx. ½ teaspoon per tortilla)

1 cup mayonnaise

1 tablespoon dried dill

¼ cup lemon juice

Optional garnishes: fresh chopped tomatoes, chopped white onion, chopped cilantro

Instructions

  1. Preheat the oven to 425°F (or 375°F if your oven typically runs hot).
  2. Brown the ground chicken in a skillet for 10-15 minutes, until the moisture has evaporated and the meat is fully cooked.
  3. Add the taco seasoning and lime juice to the cooked chicken, stirring to combine.
  4. Wrap the tortillas in a towel and microwave on high for 60 seconds to warm them.
  5. Lay the tortillas out on a sheet pan and brush or spray one side with olive oil. Flip them so the oiled side is down.
  6. Sprinkle 1 tablespoon of cheese on half of each tortilla.
  7. Top the cheese with 2 tablespoons of the ground chicken mixture.
  8. Add another tablespoon of cheese on top of the chicken mixture.
  9. Place the tacos in the oven (open) and bake at 425°F for 5 minutes.
  10. Remove the tacos, fold them over, and return them to the oven to bake for an additional 15 minutes.
  11. While the tacos are baking, prepare the ranch-style dipping sauce by whisking together the mayonnaise, dried dill, and lemon juice until smooth.
  12. Once baked, garnish the tacos with chopped tomatoes, onions, and cilantro. Serve with the ranch dipping sauce on the side.

Notes

  • Use dairy-free cheese and mayonnaise for a dairy-free option.
  • Add jalapeños or hot sauce for extra spice.
  • For a vegetarian version, replace ground chicken with black beans and corn.
  • Store leftover filling and toppings separately in airtight containers for up to 3 days in the fridge.
  • Reheat filling on stove; reheat tacos in oven at 350°F for about 10 minutes to keep crisp.
  • Flour tortillas can be used but may not crisp as well as corn tortillas.
  • Taco seasoning can be homemade with chili powder, cumin, garlic powder, onion powder, paprika, oregano, salt, and pepper.
