Ingredients

Ground Chicken Mixture

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1 tablespoon freshly chopped thyme leaves (or 1 teaspoon dried thyme)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cayenne pepper

Mashed Potato Bowl Components

  • 2 (113-gram) packages instant mashed potatoes (about 4 cups prepared)
  • 1.5 cups mixed vegetables (corn, green beans, and diced carrots; frozen or canned)
  • 8 tablespoons shredded cheddar cheese
  • 1 cup gravy (beef or chicken gravy recommended)
  • 1/4 cup crispy fried onions
  • 3 to 4 tablespoons sliced green onion

Instructions

  1. Cook Ground Chicken: Heat olive oil in a large skillet over medium heat. Add ground chicken and season with thyme, onion powder, garlic powder, salt, black pepper, and cayenne pepper. Cook, breaking into small pieces and stirring occasionally, until fully cooked, about 8 to 10 minutes.
  2. Prepare Mashed Potatoes: While the chicken cooks, prepare the instant mashed potatoes according to the package instructions.
  3. Heat Vegetables: Warm the mixed vegetables until hot, following the package directions for frozen or canned vegetables.
  4. Warm Gravy: In a small saucepan over medium-low heat, warm the gravy until heated through.
  5. Assemble Bowls: Divide the prepared mashed potatoes evenly among four bowls, spreading them to form a bottom layer. Top each bowl with cooked ground chicken, warmed mixed vegetables, and shredded cheddar cheese. Pour gravy over each serving, then sprinkle with crispy fried onions. Garnish with sliced green onions. Serve immediately and enjoy!

Notes

  • Use frozen or canned mixed vegetables based on convenience and preference.
  • For a spicier version, increase the cayenne pepper amount slightly.
  • Substitute cheddar cheese with your favorite cheese variety if desired.
  • Gravy can be homemade or store-bought; chicken or beef gravy both work well.
  • Serve with an additional side salad for a well-rounded meal.
