Ready in 25 minutes, it’s a hearty and satisfying meal perfect for a quick weeknight dinner or casual gathering, served on brioche buns or low-carb style without buns.

Ingredients

Vegetables

  • 1 small onion, diced
  • 1 small green bell pepper, diced
  • 1 small red bell pepper, diced
  • 3 cloves garlic, minced or pressed (or 1 tsp garlic powder or jarred garlic)

Meat and Dairy

  • 2 pounds lean ground beef (90/10, grass-fed preferred)
  • 8 ounces Monterey Jack cheese, shredded (preferably hand shredded for better melting)

Liquids and Sauces

  • 1 tablespoon olive oil
  • ⅓ cup BBQ sauce (store-bought or homemade)
  • 1 cup beef broth (not condensed)
  • 1 tablespoon Worcestershire sauce

Seasonings

  • 1 teaspoon beef better than bouillon (or 1 beef bouillon cube)
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Bread

  • 6 brioche buns (optional, skip for low-carb)

Instructions

  1. Sauté the onion and bell peppers: Heat the olive oil in a skillet over medium heat until warm. Add the diced onion and bell peppers, sautéing for 5-7 minutes until the vegetables become soft and tender.
  2. Add garlic and cook: Add the minced garlic cloves to the skillet and sauté for about 30 seconds, stirring until fragrant but not browned.
  3. Brown the ground beef: Push the onions and peppers to the side of the pan. Add the ground beef and cook until no longer pink, breaking it up with a wooden spoon or meat chopper as it cooks and mixing it well with the sautéed vegetables.
  4. Add sauces and seasonings: Stir in the BBQ sauce, beef broth, beef bouillon, Worcestershire sauce, kosher salt, and ground black pepper. Mix thoroughly to combine all ingredients evenly.
  5. Simmer to thicken flavors: Let the mixture simmer gently for about 10 minutes, allowing the sauce to thicken and the flavors to meld together perfectly.
  6. Incorporate shredded cheese: Just before serving, stir the shredded Monterey Jack cheese into the beef mixture until melted and creamy.
  7. Serve: Spoon the cheesy beef mixture onto brioche buns. Optionally, toast buns with butter in a pan or griddle, or toast cut side up on a baking sheet at 350°F (175°C) for 3-5 minutes for extra flavor and texture. Enjoy hot.

Notes

  • For best melt and texture, use hand-shredded Monterey Jack cheese rather than pre-packaged shredded cheese.
  • Substitute garlic powder or jarred garlic if fresh garlic is unavailable.
  • Use low-sodium beef broth if wanting to control salt levels.
  • To make it low-carb, omit the brioche buns and enjoy the beef mixture on its own or with lettuce wraps.
  • Adjust seasoning according to taste preference, especially salt and pepper.
