Ingredients

Greek Yogurt Mixture:

  • 2 cups Greek yogurt
  • 4 large eggs
  • 4 tbsp sweetener (erythritol, monk fruit sweetener, honey, maple syrup)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch or coconut flour

Berries:

  • 1 1/2 cups blueberries
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F / 175°C. Lightly grease an 8×8-inch baking dish or line it with parchment paper.
  2. Mix the Wet Ingredients: In a large mixing bowl, combine Greek yogurt, eggs, sweetener, vanilla extract, and lemon zest (if using). Whisk until smooth.
