Ingredients

1 lb chicken tenders (or sliced chicken breast)

2 tbsp olive oil (extra virgin recommended)

Juice of 1 lemon (freshly squeezed)

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried thyme

1 tsp paprika

½ tsp salt

¼ tsp black pepper

2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper until well combined.
  2. Marinate the Chicken: Add the chicken tenders to the marinade, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
  3. Preheat the Grill: Heat your grill or skillet over medium-high heat. If using a skillet, add a drizzle of oil to prevent sticking.
  4. Grill the Chicken: Place the marinated chicken on the grill or skillet. Cook for 5–7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
  5. Rest and Serve: Remove the chicken from the heat and let it rest for a couple of minutes. Garnish with chopped parsley if desired. Serve with your choice of sides or enjoy as is.
