Ingredients

Dry Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg

Wet Ingredients:

  • ⅔ cup dark brown sugar, packed
  • ⅓ cup molasses
  • ¼ cup unsalted butter, melted and cooled
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 ⅓ cup buttermilk

Optional:

  • Optional glaze:
  • 1 cup powdered sugar
  • 12 tablespoons whole milk

Instructions

  1. Preheat the oven: Preheat to 425°F and prepare muffin tin.
  2. Combine dry ingredients: Mix flour, baking soda, spices, and salt in a bowl.
  3. Prepare wet ingredients: Whisk brown sugar, molasses, butter, egg, and vanilla.
  4. Combine wet and dry: Alternate adding flour mixture and buttermilk to wet ingredients.
  5. Bake: Divide batter, bake at 425°F, then reduce heat to 350°F and bake until done.
  6. Cool and glaze: Let muffins cool, then glaze with a mixture of powdered sugar and milk.
