This Garlic Parmesan Focaccia Bread is a fluffy, golden, and flavorful homemade bread made with olive oil, garlic, Parmesan, and herbs. Perfect for snacking, sandwiches, or as a savory side dish.

Ingredients

Dough:

  • 2¼ teaspoons (1 packet) instant yeast
  • 1½ teaspoons salt
  • 1½ cups warm water (about 110°F)
  • 1 tablespoon sugar
  • ¼ cup extra virgin olive oil, plus more for greasing

Garlic Topping:

  • 34 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs or chopped rosemary (optional)
  • Flaky sea salt, for topping

Instructions

  1. Mix the Dough: In a bowl, stir together warm water, sugar, and yeast. Let sit for 5 minutes until foamy. Add flour and salt. Mix until a sticky dough forms. Knead by mixer for 5–6 minutes or by hand for 8–10 minutes until smooth.
  2. First Rise: Coat dough in olive oil, cover, and let rise for 1 to 1.5 hours in a warm spot until doubled.
  3. Prepare Garlic Oil: Grease a 9×13-inch pan. In a small pan, heat 2 tbsp olive oil with minced garlic until fragrant (about 1 minute). Set aside.
  4. Stretch and Second Rise: Transfer dough to pan. Gently press to corners. Let it rest for 10 minutes if needed, then finish stretching. Cover and let rise for 30–45 minutes.
  5. Top and Bake: Preheat oven to 425°F (220°C). Dimple the dough with your fingers. Brush with garlic oil, sprinkle Parmesan, herbs, and sea salt. Bake for 20–25 minutes until golden brown.
  6. Cool and Serve: Cool for 5–10 minutes in the pan, then transfer to a wire rack. Slice and serve warm.

Notes

  • Use warm (not hot) water to activate yeast.
  • Garlic oil adds flavor—don’t skip the quick sauté step.
  • For crispier edges, use plenty of olive oil in the pan.
  • Let rise fully for the best airy texture.
  • Store at room temperature for 2 days or freeze for up to 2 months.
