Garlic Parmesan Chicken Meatloaves are a lighter, flavorful alternative to traditional meatloaf, combining lean ground chicken with garlic, Parmesan, and fresh herbs, baked into mini loaves with a golden crust. Perfect for quick meals, meal prep, or entertaining.

Ingredients

1 lb (450g) ground chicken

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs

2 cloves garlic, minced

1 egg

1/4 cup milk

1 tablespoon fresh parsley, chopped

1 teaspoon dried oregano

1 teaspoon onion powder

Salt and pepper to taste

1/4 cup marinara sauce (optional topping)

1/4 cup shredded mozzarella cheese (optional topping)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking pan or line it with parchment paper.
  2. In a large bowl, combine ground chicken, grated Parmesan, breadcrumbs, minced garlic, beaten egg, milk, chopped parsley, dried oregano, onion powder, salt, and pepper. Mix gently until just combined.
  3. Divide the mixture into four equal portions and shape each into a mini loaf. Place them on the prepared baking pan.
  4. Optional: Spoon marinara sauce on top of each meatloaf and sprinkle with shredded mozzarella cheese.
  5. Bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C) and the tops are golden brown.
  6. Allow the meatloaves to rest a few minutes before serving to retain their juices.

Notes

  • Do not overmix the meat mixture to keep the meatloaf tender.
  • Ground turkey can be used as a substitute for chicken.
  • Cheese toppings are optional but add extra flavor and creaminess.
  • For a gluten-free version, substitute breadcrumbs with gluten-free breadcrumbs or almond flour.
  • Meatloaves can be prepared ahead and refrigerated for up to 24 hours before baking.
  • Store leftovers in an airtight container in the fridge up to 3 days or freeze up to 2 months.
  • Reheat leftovers in a 350°F (175°C) oven for about 10 minutes.
