Ingredients

For the chicken:

  • 4 boneless, skinless chicken breasts
  • Olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the potatoes:

  • 1.5 pounds baby Yukon Gold or red potatoes
  • 4 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season Chicken: Pat dry chicken breasts, season with olive oil, Italian seasoning, smoked paprika, salt, and pepper.
  3. Prepare Potatoes: In a bowl, toss halved potatoes with olive oil, garlic, Parmesan cheese, salt, and pepper.
  4. Arrange and Roast: Place seasoned chicken on one side of the baking sheet and spread potatoes on the other side. Roast for 25-30 minutes until chicken reaches 165°F (74°C) and potatoes are crispy.
