Chicken

  • 4 8-oz Boneless skinless chicken breasts
  • 2 tsp Sea salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Dried thyme
  • 1/2 tsp Dried oregano
  • 1/2 tsp Dried rosemary
  • 1/2 tsp Dried parsley

Cooking

  • 1 tbsp Olive oil
  • 3 tbsp Unsalted butter
  • 1/2 cup Chicken broth, reduced sodium
  • 5 cloves Garlic (minced)

Instructions

  1. Prepare the chicken: Pat the chicken breasts dry using paper towels to remove any moisture. Season both sides evenly with sea salt, black pepper, dried thyme, oregano, rosemary, and parsley.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Place the chicken breasts in a single layer and cook for 4-8 minutes per side until they are golden brown and just cooked through. Lower the heat to medium if the chicken browns too quickly. Once done, transfer the chicken to a plate and cover it to keep warm.
  3. Make the sauce base: Add the unsalted butter and reduced sodium chicken broth to the skillet. As the butter melts, use a wooden spoon to scrape the bottom of the pan, deglazing and loosening any browned bits for extra flavor.
  4. Sauté the garlic: Turn the heat down to low and add the minced garlic to the skillet. Sauté it for about 1 minute until fragrant, making sure the garlic does not burn.
  5. Combine and coat: Return the cooked chicken breasts to the pan. Flip them once or twice so they are coated well with the garlic butter sauce. If needed, warm the chicken in the sauce for an additional 1-2 minutes.
