Ingredients

Stir Fry Base

  • 1 tablespoon oil (see recipe notes)
  • 1 onion, diced
  • 5 garlic cloves, minced
  • 1 heaped tablespoon fresh ginger, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • Black pepper, to taste
  • Sea salt, to taste
  • Pinch of cayenne pepper
  • 1 medium head of broccoli, cut into small florets
  • 1/3 cup vegetable broth

Protein and Sauce

  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1/2 cup water
  • 3 tablespoons soy sauce (gluten-free if needed)
  • 2 tablespoons rice vinegar or balsamic vinegar
  • 2 tablespoons maple syrup (or any other sweetener)
  • 1 tablespoon cornstarch

To Serve

  • Cooked rice of choice

Instructions

  1. Prepare the Aromatics: Heat 1 tablespoon of oil in a pan over medium heat. Add diced onion, minced ginger, minced garlic, and all the spices including onion powder, paprika, smoked paprika, black pepper, sea salt, and cayenne pepper. Sauté the mixture for 3-4 minutes until fragrant and the onions are softened.
  2. Cook the Broccoli: Add the broccoli florets and 1/3 cup vegetable broth to the pan. Continue frying the mixture over medium heat for about 10 minutes, stirring occasionally, until the broccoli is tender but still retains a slight crunch.
  3. Prepare the Sauce: While the broccoli cooks, take a medium bowl and whisk together 1/2 cup water, 3 tablespoons soy sauce, 2 tablespoons rice vinegar or balsamic vinegar, 2 tablespoons maple syrup, and 1 tablespoon cornstarch until smooth and well combined.
  4. Add Sauce and Chickpeas: Pour the prepared sauce into the pan with the broccoli. Add the rinsed and drained chickpeas, stirring well to combine all ingredients.
  5. Simmer the Stir Fry: Bring the mixture to a boil and allow the sauce to simmer for a few minutes until it thickens and coats the broccoli and chickpeas evenly.
  6. Season to Taste: Taste the stir fry and adjust the seasoning as needed by adding more salt, pepper, or cayenne pepper to your preference.
  7. Serve: Serve the garlic broccoli stir fry hot, either on its own or over your choice of cooked rice. Enjoy your flavorful and nutritious meal!
