Ingredients

Granola Base

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 34 tbsp honey (depending on desired sweetness)
  • 1 tsp vanilla extract

Filling and Topping

  • 1 1/2 cups Greek yogurt (preferably full-fat or low-fat, as desired)
  • Berries of choice to top (such as blueberries, strawberries, or raspberries)

Instructions

  1. Prepare the Granola Dough: In a mixing bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Stir until the mixture forms a sticky dough. If the dough feels too dry, add additional almond butter and honey a little at a time until it holds together well.
  2. Form the Granola Cups: Line a muffin pan with cupcake liners. Spoon a portion of the granola dough into the bottom of each muffin liner and firmly press it down with your fingers to create a sturdy base for the cup.
  3. Add Yogurt and Toppings: Spoon a layer of Greek yogurt onto each granola base, smoothing it out gently. Then top with fresh berries of your choice and sprinkle any leftover granola on top for added texture.
  4. Freeze to Set: Place the muffin pan in the freezer and allow the granola cups to set for at least 4 hours. Before serving, let them thaw slightly at room temperature for a few minutes to soften.
