Frozen Chocolate Peanut Butter Banana Bites are a delicious and healthy snack made by sandwiching peanut butter between banana slices, freezing them, and then coating them in melted dark chocolate. Ingredients

Banana Bites

  • 3 bananas, ripe but still firm
  • 1/4 cup peanut butter (natural smooth or your favorite nut butter)

Chocolate Coating

  • 10 oz (280 g) dark chocolate, chopped or chocolate chips
  • 2 teaspoons coconut oil (optional but recommended)

Instructions

  1. Slice the Bananas: Cut the bananas into 1/4 inch (0.7 cm) slices. Set aside half of the slices and arrange the other half on a baking sheet lined with parchment paper.
  2. Heat the Peanut Butter: Microwave the peanut butter on low or medium heat for 30 seconds to 1 minute, stirring occasionally, until it is smooth and easy to spread.
  3. Assemble Banana Sandwiches: Spoon a heaped 1/4 teaspoon to 1/2 teaspoon of peanut butter onto each banana slice arranged on the baking sheet. Top with the remaining banana slices to form sandwiches. Freeze for 2 hours.
  4. Prepare the Chocolate Melt: Place chopped dark chocolate and coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second intervals on low/medium heat, stirring between intervals until the chocolate is fully melted and glossy, being careful not to burn it.
  5. Coat the Frozen Bites: Line another baking sheet with parchment paper. Working with 2-3 frozen banana sandwiches at a time, dip them into the melted chocolate. Use two forks to roll and coat all sides in chocolate.
  6. Remove Excess Chocolate: Lift the bites to remove excess chocolate and place them on the prepared baking sheet. Repeat with the remaining frozen sandwiches. Remelt chocolate if it starts to thicken.
  7. Freeze to Set: Place the chocolate-coated bites back in the freezer until the chocolate is set solid.
  8. Store: Transfer the set bites to an airtight container and keep them in the freezer until ready to eat.
  9. Serving Tip: For sensitive teeth, let the bites sit at room temperature for a couple of minutes after removing from the freezer before eating to soften slightly.
