Ingredients

Banana Bites

  • 3 ripe bananas
  • 1/3 cup peanut butter (or almond butter)

Chocolate Coating

  • 1/2 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Slice bananas: Cut each ripe banana into slices about 1/4 inch thick. Aim for around 10 slices per banana if they are large.
  2. Prepare baking sheet: Line a baking sheet with parchment paper ensuring it will fit inside your freezer.
  3. Arrange banana slices: Place half of the banana slices on the parchment paper on the baking sheet.
  4. Add peanut butter and form sandwiches: Spread a thin layer of peanut butter or almond butter on each banana slice on the baking sheet. Top with another banana slice to create a sandwich.
  5. Freeze banana sandwiches: Place the baking sheet in the freezer and freeze the banana sandwiches for about one hour until firm and frozen on the outside.
  6. Melt chocolate and coconut oil: Combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave for 30 seconds, stir, and continue microwaving in 20-second increments until fully melted and smooth.
  7. Dip banana sandwiches in chocolate: Dip each frozen banana sandwich halfway into the melted chocolate, coating them partially.
  8. Freeze chocolate-coated bites: Place the dipped banana bites back onto the parchment-lined baking sheet and freeze for 20 minutes until the chocolate hardens.
  9. Store and serve: Enjoy immediately or store the frozen banana bites in a freezer-safe bag for up to one month. Allow to thaw for about 5 minutes before eating for a softer texture.
