Ingredients

Dry Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda

Wet Ingredients

  • 1 cup oat milk (or other milk alternative or dairy milk)
  • 1 large egg
  • 2 tablespoons vegetable oil, melted coconut oil, or melted butter
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Blend dry ingredients: Using a medium-sized bowl, whisk together all the dry ingredients—flour, sugar, baking powder, and baking soda—until well combined.
  2. Combine with wet ingredients: Add the oat milk, egg, melted butter or oil, and vanilla extract (if using) to the dry mixture. Stir gently with a fork or whisk just until combined; a few small lumps in the batter are fine, but avoid overmixing.
  3. Rest batter and preheat pan: Let the batter rest for about 10 minutes to thicken slightly while you preheat a pan or griddle over medium heat.
  4. Grease and portion batter: Lightly grease the heated pan or griddle with oil or butter. Lower the heat to medium and pour about 1/4 cup of batter for each pancake, spreading it gently into a round shape approximately 4 inches in diameter.
  5. Cook and flip pancakes: Cook each pancake for 1 to 2 minutes until the edges appear set and matte, and bubbles form on the top surface. Flip once carefully, then cook the other side until golden-brown, another 1 to 2 minutes.
  6. Repeat: Continue cooking the remaining batter following the same process until all pancakes are done.
  7. Serve and enjoy: Serve the pancakes warm with your favorite toppings such as fresh whipped cream, butter, maple syrup, or fresh berries. Enjoy your fluffy, tender oat milk pancakes!

Notes

  • Using oat milk makes these pancakes dairy-free and imparts a slight natural sweetness.
  • Do not overmix the batter; it should be slightly lumpy for fluffier pancakes.
  • Resting the batter allows the baking powder and soda to activate, improving texture.
  • You can substitute all-purpose flour with gluten-free flour for a gluten-free version.
  • Adjust the heat as needed to avoid burning the pancakes before they are cooked through.
