Ingredients

Chicken:

  • 2 boneless, skinless chicken breasts (thinly sliced)
  • 1½ tablespoons olive oil
  • Cajun seasoning, to taste
  • Onion powder, to taste
  • Garlic powder, to taste
  • Paprika, to taste
  • Black pepper, to taste

Sauce:

  • 4 tablespoons butter
  • 1 cup grated Parmesan cheese
  • 1½ cups heavy whipping cream

Additional:

  • Cooked white rice (enough for 4 servings)

Instructions

  1. Cook the Rice: Prepare white rice according to the package instructions. Set aside and keep warm.
  2. Season & Sear the Chicken: Slice chicken breasts horizontally if thick, to make thin cutlets. Season with Cajun seasoning, onion powder, garlic powder, paprika, and black pepper. Sear in olive oil until golden and cooked through.
  3. Make the Creamy Sauce: Melt butter in a skillet. Pour in heavy cream, Cajun seasoning, paprika, and pepper. Stir in Parmesan until smooth. Simmer to thicken.
  4. Plate the Dish: Fluff rice onto plates. Slice chicken and place over rice. Drizzle with creamy sauce.
  5. Serve: Enjoy hot!
