Soft, buttery sugar cookies are baked to golden perfection, then topped with vibrant green grass-like frosting and adorned with small chocolate eggs, making them as beautiful as they are delicious.

Ingredients

Cookie Dough

  • 5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup vegetable shortening (Crisco)
  • 2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Frosting

  • 3/4 cup vegetable shortening
  • 1/4 cup unsalted butter, softened
  • 7 cups (2 pounds) confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk (as needed)
  • Green food coloring

Decoration

  • 2 bags small chocolate eggs
  • Piping bags and grass piping tip

Instructions

  1. Prepare the Dry Ingredients: In a large bowl, sift together the flour, baking powder, and salt to ensure even distribution of the leavening and salt. Set aside this mixture.
  2. Cream Wet Ingredients: Using a stand mixer fitted with the paddle attachment, cream together the vegetable shortening, sugar, eggs, and vanilla extract until light and fluffy. This process helps to incorporate air into the dough for tender cookies.
  3. Combine Ingredients: Gradually add half of the dry ingredients to the creamed mixture while mixing slowly. Then, pour in the buttermilk to add moisture and richness. Add the remaining dry ingredients and mix just until incorporated to avoid overworking the dough. Chill the dough in the refrigerator overnight or for at least four hours to firm it up and develop the flavors.
  4. Preheat Oven & Prepare Dough: After chilling, preheat your oven to 375°F (190°C). On a well-floured surface, roll out about a quarter of the dough to approximately 1/4 inch thick. Use a 3-inch circle cookie cutter to cut out the cookies and place them on ungreased cookie sheets.
  5. Bake Cookies: Bake the cookies for 8-10 minutes or until the edges just begin to brown. This ensures soft, tender cookies. Once baked, remove from the oven and transfer the cookies to a wire rack or countertop to cool completely.
  6. Prepare Frosting: While the cookies cool, make the frosting by creaming together the vegetable shortening and softened butter until smooth. Gradually add the confectioners’ sugar, one cup at a time, to avoid lumps. Mix in the vanilla extract and add 2-3 tablespoons of milk as needed to achieve a smooth, spreadable consistency. Stir in green food coloring thoroughly to create a vibrant grass hue.
  7. Decorate Cookies: Spoon the green frosting into a piping bag fitted with a grass tip. Pipe grass-like frosting onto each cooled cookie to resemble a grassy nest. Top each cookie with three small chocolate eggs to complete the festive look.
  8. Set & Store: Allow the frosting to set properly before packing the cookies. Store them in an airtight container to maintain freshness and soft texture.
