This Easy Tuna Patties recipe offers a quick and flavorful way to enjoy canned tuna. Combining panko breadcrumbs, fresh vegetables, and a blend of spices, these golden brown patties are pan-fried to perfection. Perfect as a light lunch or dinner, they are crispy on the outside and tender inside.

Ingredients

Wet Ingredients

  • 3 tablespoons avocado oil (for frying, up to 6 tablespoons)
  • ⅛ cup mayonnaise
  • 1 egg
  • 1 tablespoon fresh lemon juice

Dry and Seasonings

  • 10 oz canned tuna in water, drained
  • 1 cup panko breadcrumbs
  • ½ teaspoon Old Bay seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon dill weed
  • ¼ teaspoon fresh ground black pepper

Vegetables and Herbs

  • ½ cup chopped red bell peppers
  • ¼ cup green onions, chopped
  • 2 tablespoons chopped parsley

Instructions

  1. Heat the oil: Place 3 tablespoons of avocado oil in a skillet over medium heat to prepare for frying the patties.
  2. Mix ingredients: In a large bowl, combine the drained canned tuna, panko breadcrumbs, chopped red bell peppers, mayonnaise, egg, chopped parsley, lemon juice, Old Bay seasoning, garlic powder, dill weed, black pepper, and chopped green onions. Mix thoroughly until all ingredients are well incorporated.
  3. Form patties: Using a ½ cup measuring spoon, shape the mixture into evenly sized patties to ensure they cook uniformly.
  4. Cook first side: Place the patties in the hot skillet and cook for 2 to 3 minutes on one side or until they turn golden brown and develop a crispy crust.
  5. Cook second side: Flip the patties carefully and cook for an additional 2 to 3 minutes, allowing the other side to become golden brown and fully cooked through.

Notes

  • For crispier patties, avoid overcrowding the skillet to maintain medium heat.
  • You can substitute panko breadcrumbs with gluten-free breadcrumbs if needed.
  • Adjust seasonings like Old Bay or garlic powder to taste.
  • Serve with a squeeze of fresh lemon or your favorite dipping sauce for added flavor.
  • These patties can also be baked at 400°F for 12-15 minutes for a lower fat option.
