  • 1 cup salted butter
  • 1 shallot, minced
  • 5 cloves garlic, minced (about 2 Tablespoons)

  • 1 teaspoon red pepper flakes
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder

Instructions

  1. Melt the butter and cook shallots: In a medium skillet over medium heat, melt the salted butter. Once fully melted, add the minced shallots and cook for 2 to 3 minutes until they become soft and translucent.
  2. Add the garlic: Stir in the minced garlic and cook for an additional minute, allowing the garlic to become fragrant but not browned.
  3. Add spices: Incorporate Old Bay seasoning, brown sugar, smoked paprika, red pepper flakes, onion powder, chili powder, and cayenne pepper into the skillet. Stir well and let the spices cook with the butter and aromatics for 3 to 4 minutes to develop their flavors.
  4. Add chicken stock and simmer: Pour in the chicken or shellfish stock and bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and let it simmer gently for 8 to 10 minutes to thicken slightly and meld the flavors.
  5. Finish the sauce: Remove the skillet from heat and stir in the lemon juice, lemon zest, and minced fresh parsley. Taste the sauce and season with salt and pepper as desired.
