These Easy Sausage Breakfast Muffins are a savory, protein-packed, grab-and-go breakfast made with sausage, eggs, cheese, and Bisquick. They’re perfect for busy mornings, meal prep, or a quick snack.

Ingredients

Sausage:

  • 1 lb breakfast sausage (mild or spicy)

Bisquick Baking Mix:

  • 1 cup Bisquick baking mix

Cheddar Cheese:

  • 1 cup shredded cheddar cheese

Eggs:

  • 4 large eggs

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin thoroughly.
  2. Cook Sausage: Cook the sausage in a skillet over medium heat, crumbling it as it browns. Drain excess grease.
  3. Prepare Mixture: In a large bowl, whisk the eggs until smooth. Stir in cooked sausage, shredded cheddar, and Bisquick. Mix until just combined.
  4. Fill Muffin Tin: Spoon mixture into muffin tin, filling each cup about two-thirds full.
  5. Bake: Bake for 20 minutes or until tops are golden and a toothpick inserted comes out clean.
  6. Cool and Serve: Let muffins cool slightly in the tin, then remove and serve or store.

Notes

  • Add chopped veggies like bell peppers, onions, or spinach for variation.
  • Use different cheeses such as Monterey Jack or gouda for a twist.
  • Use parchment muffin liners or silicone tins to prevent sticking.
