Enjoy this easy saucy ramen noodles recipe with a thick and flavorful sauce that can be customized with your favorite veggies, tofu, or mushrooms. The versatile sauce can also be used for stir-fries. A delightful and satisfying dish!

Ingredients

Noodles

  • 2 servings dry instant ramen noodle cakes or other noodles of choice (around 140 g total)

For Sautéing

  • 10 oz extra firm tofu, veggies, or mushrooms of choice sliced

Sauce (see notes)

  • 1 cup water or vegetable broth (see notes)
  • 57 tbsp soy sauce adjust according to desired taste
  • 1.5 tsp dark soy sauce, optional for color
  • 23 tbsp corn starch, see notes
  • 13 tbsp sugar, maple syrup, or other liquid sweetener, adjust according to desired sweetness
  • 2 tbsp rice vinegar, white vinegar, or lemon juice, adjust according to desired sourness
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce or other hot sauce, optional for spice (see homemade chili garlic sauce recipe here)
  • 1 tbsp sesame oil
  • 2 cloves garlic minced (optional)

For Serving

  • Chopped scallions for topping
  • Sesame seeds for topping

Instructions

  1. Mix all the sauce ingredients until well incorporated. Adjust the measurements to your taste preferences. Set aside.
  2. Boil water and cook the noodles until partially done. Drain and set aside.
  3. Sauté veggies, tofu, or mushrooms in a pan.
  4. Simmer the sauce in the pan until thickened. Add the noodles and cook until well-coated.
  5. Season to taste and garnish with sesame seeds and spring onions. Enjoy hot!

Notes

  • Sauce: Double the recipe for more ingredients.
  • Soy sauce: Adjust if using vegetable broth.
  • Corn starch: Start with 2 tbsp and adjust for thickness.
