  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 medium onion, finely diced
  • 1 red bell pepper, diced
  • 2 tbsp roasted red pepper spread
  • 1 1/2 cups heavy cream
  • 1 tbsp all-purpose flour mixed with 2 tbsp water (slurry)
  • Salt & freshly ground black pepper, to taste

Pasta

  • 8 oz Brami pasta, cooked al dente

Cheese and Garnish

  • 1/2 cup freshly grated Parmesan cheese
  • 1 ball of burrata cheese, for topping
  • Fresh parsley, chopped, for garnish
  • Chili flakes, for garnish

Instructions

  1. Sauté the veggies: Melt butter with olive oil in a skillet over medium heat. Add the finely diced onion and diced red bell pepper, cooking until they are soft and fragrant. For extra flavor, add plenty of garlic if you like.
  2. Add the roasted red pepper: Stir in the roasted red pepper spread along with a splash of pasta water reserved from your cooking pot. Let the mixture simmer on low heat until the flavors meld into a creamy sauce.
  3. Make it creamy: Pour in the heavy cream and stir gently to combine. If the sauce appears too thin, whisk in the prepared flour slurry to thicken it up to a luscious consistency.
  4. Combine with pasta: Add the cooked Brami pasta to the skillet and toss thoroughly so every strand is coated in the creamy roasted red pepper sauce. Allow it to cook together for a couple of minutes so the pasta absorbs the rich flavors.
